What is Caramel / Crystal Malt?

Once the barley grain has been soaked, maltsters treat Caramel and Crystal Malt differently to other malts. Before they go into the kiln to roast, the malt is kept at a static temperature equivalent to the temperature of mash conversion for an hour—or longer, depending on the maltster and the type of malt. 

Caramel and Crystal Malt is higher in sugar content than other varieties of malt because of this extra step in the malting process, and so it brings a sweeter, more complex flavour to brews. It also means that brewers can use Caramel and Crystal Malt to increase the sugar content of their mash, giving the yeast more sugar to convert and therefore raising the alcohol content of the beer.

What do Caramel and Crystal Malts taste like?

The range of options within the Caramel and Crystal Malts category shows how diverse this variety of malt is, but there are some common flavours that make Caramel or Crystal Malt easy to spot.

Because of their high sugar content and light-to-medium roasting in the kiln, malts like CaraPils have a toasted biscuity flavour, like a digestive or a rich tea biscuit. This pleasantly clean style of Caramel Malt adds sweetness and richness to a beer without overpowering the brew with deeper, richer flavours.

Some Caramel and Crystal Malts are kilned to be a little darker, and these tend to have a more deeper caramel or toffee-like flavour. These types of malts are especially delicious in recipes that require more body, a richer mouthfeel, or a more satisfyingly sweet flavour.
