What is Liquid Malt Extract?

Simply, it is malt in liquid form. It is a thick, molasses-like syrup with a strong, sweet malt aroma. The colour is usually golden brown but can be almost black (depending on the grains used).

How is Liquid Malt Extract made?

The beginning process is not unlike making an all-grain brew. Grains are added to boiling water to make a mash. Less water is used than in a traditional brew to assist dehydration. The grain solids are removed, and the wort is filtered to remove as many particles and sediment as possible. The wort undergoes an evaporation process. This will remove about 80% of the water, leaving the thick malt concentrate.

Depending on the extract type, it retains all the sugars, vitamins, proteins, and enzymes. This means it has everything needed for yeasts to do their thing and transform those fermentable sugars into beautiful beer.
Types of Liquid Malt Extract
There are several different types of liquid malt extract available, each with its own unique flavour and colour profile. The most common types include:

  • Light Liquid Malt Extract
  • Amber Liquid Malt Extract
  • Dark Liquid Malt Extract

These are commonly used in the production of beers, as well as bread and other baked goods.

Muntons Malt Extract

Muntons is one of the largest manufacturers of liquid malt in the UK. It is used for extract brewing and in many of our favourite foods. Muntons Liquid malt extracts are used to make baked goods, confectionery, ice cream, dairy drinks, soft drinks, and much more, not to mention beer and extract brewing.

Muntons manufactures an extensive range of liquid extracts specifically developed to meet customers' needs in diverse industries. They use only the finest East Anglian malting barley as their prime raw material.

Liquid malt extracts provide a valuable source of fermentable sugars and introduce a traditional malty flavour and natural colour. Through careful control of the evaporation process during concentration, naturally occurring enzymes present in malt can be preserved to create diastatic malt extracts. These enzyme-rich extracts can convert starches from other sources into sugars.
